This is one of my favorite cornbread recipes and so easy! It is also gluten free. I've linked and also broken it down so it is a bit easier to read the actual recipe.

1 Tsp Salt
1 Tsp Baking Powder
1/2 Tsp Baking Soda
2 1/2 C Corn Meal
1 - 2 Tbsp Honey
1 - 2 Large Eggs, Beaten
1 - 2 Tbsp Oil
2 C Buttermilk or Milk Substitute
Preheat oven to 425 deg.F.
Grease an 8" x 8" pan or muffin tin.
Sift the salt, baking powder, and soda together and combine with the cornmeal.
Mix the wet ingredients together, and then add the dry, stirring just until smooth.
Turn into the greased pan and bake about 20 or 25 minutes --or only about 15 minutes for muffins.
